Among olive groves and ancient roots, the show of the Butteri alla Corte degli Ulivi rediscovers an authentic Maremma profession, elegantly recounting the bond between man, horse and livestock.
From the moment you're welcomed, during a charming stroll among the farm's centuries-old olive trees, you'll feel a sense of time standing still. Then, in the "mandriolo," the ancient enclosure dedicated to the animals, the true protagonists reveal themselves: the "Butteri," herdsmen on horseback, who introduce them to the tools and techniques of their trade. This is where the heart of the performance comes to life: the descent of the Maremma cows, the capture of the calf with the lacciaia, and traditional galloping games such as the relay race or the carousel between teams on horseback.
A speaker accompanies the demonstration, explaining the history and meaning of each gesture: a tale that combines skill, culture, and landscape for about an hour and a half. At the end, you can purchase the farm's products—organic olive oil, Maremma Toscana DOC wines, grappa, and more—at a small on-site shop.
The experience continues with a lunch or dinner themed around Authentic Maremma, showcasing local flavors: bruschetta, cured meats, pasta alla buttera, grilled meat, seasonal side dishes, and homemade dessert, accompanied by DOC wine and coffee.
